Except that seems to be going in the other direction: from DocBook into
Texinfo XML.
(And in looking into this briefly, I haven't found anything that
converts Texinfo XML into native Texinfo.)
It would be better if people produced their formatted documentation from
DocBook XML, but that doesn't mean much if all they've been provided
with is the Texinfo version.
The whole idea could be misdirected anyway since it now seems more
likely that .info rather than .texi files would be available to people.

p.s. I am amused by the Texinfo description of DocBook:

since, if they chose, the DocBook folks could say much the same about
Texinfo:

The "developed some years ago" and "bears some resemblance" are such
nice put-downs. They really let you know which is the best and most
modern alternative.
